Quick spring snack

My favorite snack idea is veggie, simple and it is fast but… not furious to prepare and enjoy it with your dear ones, at any age!
First thing first, you need to finely chop three spring onions and mix them with one cup of good quality mayo, it could be veggie, or the classic version. Add a pinch of salt and also some finely chopped dill. Relax, if you are not a big fan of dill, you can replace it with some cilantro or parsley!
Next, add one small can with sliced mushrooms, make sure you drain them, and give a good stir. Check for salt and optional you can add half a teaspoon of Dijon mustard, you know, for a little kick!
Spread this thick and yummy spring salad on bread and enjoy it like that. It is full of flavor and also it is so versatile, because you can also use it as a side dish for French potatoes, but also for your deep fried or grilled meat. It works great as a base for your turkey meat sandwiches!
