This is a way to enjoy a delicious and healthy dessert when you want to avoid lactose. All you need is a can of good quality coconut milk, 25 lemon flavor digestive biscuits and 2 cups of blueberries and sliced strawberries.

Optional you can add one tablespoon of honey or maple syrup into the coconut milk, but trust me, it has enough sweetness from the biscuits and the berries. Make sure you keep the coconut milk at room temperature for one or two hours so it could run easily out of the can into a bowl. A good quality coconut milk has a thick creamy consistency so you can add the smashed biscuits and the berries and give a good stir until the biscuits could easily absorb the milk and turn everything into a thick and rich cream. Place the bowl into the fridge until the yummy mix turns thick enough so you could cut it, if you want to.

You need to adjust the biscuits and fruits quantities before you put the mix into the fridge, because you don’t want a sweet coconut soup but a creamy scrumptious dessert. You can replace berries with any crunchy and full of flavor fruits slices you like, it could be pear, peach, pineapple, raspberry, you name it.
