Pour three cups of whole milk into a saucepan and bring it to boil, add a teaspoon of salt and two tablespoons of butter and then… let it snow with a cup a corn flour! Whisk constantly until your polenta starts bubbling.

Add a pinch of saffron for a secret touch of color and flavor. Stop boil it and add a cup of provolone cheese or any type of cheese you like, including the gluey, milky mozzarella!

Put one layer of polenta into a buttered oven tray, cover it with sliced mozzarella cheese, smoked bacon or sausages and cover with the rest of the polenta. Let it snow again with parmesan and put the tray into the oven until the cheese on top is melted and your fake cake looks bright golden.

Let it rest and cool for a while, take it out of the tray and cut it into rectangular shapes or, if you dare for more, you can create stars or hearts with your polenta cake.

You can decorate it with some deep fried basil leaves and cherry tomatoes, or with some deep fried sauerkraut ribbons. It’s a delicious dish you can enjoy warm or cold and your family and friends will always ask for more.
