It looks Christmassy, it tastes great, it`s super easy to prepare, and you can ask a little help from your kids, because they can safely prepare it.

This is a recipe I put it together to celebrate Saint Nicholas, who loves so much children all ages and leave them gifts in their boots, every year, in the night of 5 to 6 December. He is the one who actually leads the way for Santa.

We all bake cookies and leave them on a plate, together with a good glass of milk, so Santa could take a break and enjoy it, when he brings us the Christmas gifts. Why wouldn’t do the same for Saint Nicholas? He deserves a good cake, too!

You need a tray with nice roasted Kataifi or Kadayif noodles (pastry). Boil about three cups of water and sugar, or if you don’t use sugar, add some saccharine pills in. Add some vanilla extract and pour the syrup with a tablespoon over the noodles, until you cover all of them. Check if they soaked in the syrup and they are soft, which means they are ready for the next step of this cake.

Take pistachio paste, look for its green color version and also the healthier one. Law sugar level, I mean. Both pistachio paste and Kadayif noodles are easy to buy from an international hypermarket, so you don’t need any… culinary skills! Spread the pistachio paste on the noodles, add big blobs of thick coconut milk, sprinkle lots of raspberries and enjoy Saint Nicholas cake!

I had this idea of Turkish Kadayif noodles and pistachio because of the Turkish origin of Saint Nicholas story. He was a Christian bishop of Myra, today the Turkish city of Demre.

Now, get busy! Call your kids and your significant other, prepare this super easy and delicious cake and enjoy it!

You could try another version of this fast Kadayif cake for the New Year’s Eve party, replacing the pistachio paste with a sour sweet jelly you like the most and cream instead of coconut milk. Also, this year, you can forget about Tiramisu! You can replace the Lady Fingers with Kadayif noodles, soak them with a super sweet espresso, spread a good quality chocolate cream and cream, sprinkle some cocoa powder and enjoy it!

If you want make your own pistachio paste but it is okay to save some time and effort especially when you will get busy for Christmas, in no time! If you want your homemade version of pistachio paste, you need to roast 60% pistachio, 20% peanuts and 20% sunflower seeds and grind them together with a small amount of sugar and just a pinch of green color.
