Red Tzatziki sauce
Try my red Tzatziki sauce and you’ll discover a delicious and new way to add some spice to any boring dish, so your kids, grandkids and all your dear ones will ask for more! Also, you`ll discover a good way to turn this sauce into a healthy cold soup for the hot summer days.
Peel two medium size cucumbers, remove their seeds and shred them. Add two garlic cloves finely minced and turned into a thick paste with a little help from a pinch of salt and one tablespoon of sunflower or rapeseeds oil. Don’t use olive oil, because it will change the taste, turning too bitter! Mix a big cup of Greek yogurt with a teaspoon of red bell peppers paste, and two or three tablespoons of good quality tomatoes paste, sun dried tomatoes paste would be awesome. Check for salt, because usually the bell peppers paste is already salted. Mix the red yogurt paste with the pale green paste and check again for salt.
Now, if kids and grandkids are not around, and you are ready to dare for more, add a touch of hot chili paste and sprinkle some sumac powder for a final touch of yumminess! This red Tzatziki sauce works great with any veggie and meat dish, fish and seafood included.
It is also a good way to enjoy a healthy cold soup, ready to go, by simply adding more yogurt, it could be Ayran, for a running version, ready to drink, or some Greek yogurt, and also some shredded cheese, for the thicker and creamy version, to enjoy it, spoon by spoon.
