My spin-leak tart is the yummiest way to make your kids and grandkids eating veggies without any complains.

First thing first, you need 24 salty crackers, could be their… cheesy version, too. Smashed them and add some melted butter, until you get a wet sand like composition. Put it into an oven tray, pressing it to completely cover the bottom of the tray.

Mix one big can of spinach, well drained, with the same amount of finely chopped leak, after you washing it carefully, to remove possible sand or dirt hidden between its leaves. Use about four tablespoons of vegetable oil and cook a little the veggie mix, until the leak gets soft, adding about one cup of grated cheese, salt and pepper. Optional, you can add some finely chopped dill, for extra flavor. Let the green mix rest for a while and then add it on top of the crackers tart base.

Now, you can use the easy way, simply putting the tray into the fridge and eat the tart as a… healthy cold snack, or you can mix three eggs with a pinch of salt and one cup of grated parmesan, cover the green layer of your tart and place the tray into the oven, until it turns golden brown. You can serve it with a good blob of Greek yogurt on top.

If you are not a big fan of leak, you can replace it with spring onions and it will taste great, too.
