Healthy veggie… mayo
This recipe is the healthy way to enjoy mayo without feeling guilty. Forget about the eggs and replace them with the humble oatmeal! I know it could be a love or hate situation, but I dare you to try this once! You might be pleasantly surprised.
So, you need 5 tablespoons of oatmeal mixed with 5 tablespoons of hot water. Wait about 5 minutes to soft a little the paste. Add 3-5 tablespoons of vegetable oil, sunflower or rapeseeds oil, little by little, one teaspoon of yellow mustard, salt and about half a teaspoon of lemon juice. For an extra flavor but also to give your veggie mayo a little… blush, add quarter of a teaspoon of red chili paste.
It tastes good and if you are looking for a smoother texture, pass the mayo thru a strainer. You can also add chopped chives or capers, or even some Kalamata olives. Best way to enjoy your veggie mayo is with a tomatoes, cucumbers, salt and vinegar salad. Try to find a good mustard, check the label to make sure it`s sugar free. Dijon mustard is sugar free but it is also spicy so make sure you like it.
