Add 3-5 tablespoons of vegetable oil, sunflower or rapeseeds oil, little by little, one teaspoon of yellow mustard, salt and about half a teaspoon of lemon juice. For an extra flavor but also to give your veggie mayo a little… blush, add quarter of a teaspoon of red chili paste.

It tastes good and if you are looking for a smoother texture, pass the mayo thru a strainer. You can also add chopped chives or capers, or even some Kalamata olives.
