Yummy pickled baby zucchini!
If you`re looking for some special, delicious and also healthy pickles, I mean sugar free, you should dare to prepare your own pickled zucchinis! These will be the perfect match for your moussaka dish, your burgers or even your French fries!
First you have to wash half a pound of small size zucchinis and keep them into fresh water for an hour. Boil half a pound of water with one tablespoon of salt and one tablespoon of vinegar. Place the zucchinis into a jar, along with 2-3 garlic cloves, 1 teaspoon of pepper seeds, 3-4 horseradish sticks and some dried dill sticks or one teaspoon of dill powder and pour the this spicy brine into the jar. Make sure the zucchinis are… under the water level! Keep the jar uncover until the next day, when you should get the brine out of the jar, bring it to a boil and pour it back into the jar. You should repeat the same procedure for the third day, too, and then put the lid on your jar and keep it into the pantry, for two weeks.
