Yummy peas with some secret… leftovers
Don`t be afraid of leftovers, sometimes these will be your perfect add to take something basic to the next level of… yumminess!
In this particular case, I am talking about chicken breast leftovers, grilled, baked, it doesn`t really matter, not so inviting when it comes to taste. All you have to do is to keep the chicken breast leftovers into the freezer for couple of hours or until you buy a nice bag of frozen peas and start your new culinary adventure. You have to grate the chicken breast frozen, so you could make this easier and also to get tiny pieces, easy to mix with the frozen peas when time is right.
So, first thing first, chop a big onion and give it a good fry in 2-3 tablespoons of vegetable oil, into a large pot. Sprinkle a pinch of salt on top of the onion, so it could help the juice to come out and make the onion more tender. Add the frozen peas and the shredded frozen chicken leftovers, cover with a lid and leave them cooking together for 5 minutes. Don`t sit down, now it`s time for you to add that secret ingredient which makes the difference between a basic boring peas dish and the special recipe you will always want to cook when you have to deal with chicken breast leftovers again! Shred some frozen Mozzarella or any cheese leftovers and keep them into the freezer until the moment is right to add them into the peas pot. After the peas and chicken breast leftovers are tender, add 2-3 tablespoons of tomato paste mixed with half a teaspoon of chili paste, check for salt, and let them cook together for couple of minutes. Turn off the heat and finally add the shredded frozen cheese and also two tablespoons of finely chopped dill, for some freshness. For even more yummy flavor but also for some extra shine you could add small pieces of butter.
