This is a funny recipe, as funny as its name reminding me of a delicious ice cream full of chocolate flakes. Well, now it’s all about a soup full of yumminess! So, trust me, you will win new funs in the kitchen, who will ask some more! Especially your kids!

You need a good chicken soup, about one pound, three cups of thick tomato paste, four eggs and a bowl of grated Parmesan, or hard Cheddar, or Pecorino Romano cheese. Mix the tomatoes paste with the soup and give it a good boil. Then, all you have to do is to mix the eggs with the cheese and pour them, with a little help of a fork, into the boiling… red chicken soup, until you will get delicious cheesy flakes floating all over.

For the final touch, add some finely chopped parsley and chives. It works great on cold weather, with some butter fried croutons. If you really want to take this humble straccia-soup to the next level, serve it with one nice blob of double cream on top of it, or with some… chunks of deep fried chicken skin.
