My Greek sour soup

This is an old family recipe I’ve learned from my mom. It is fast but not furious to cook, super easy, even if you step for the very first time in a kitchen, and it is delicious to enjoy with your dear ones. Trust me, everybody, kids and grandkids included, will ask you to cook again this healthy and delicious sour soup!
First thing first, you need about half a pound of lamb meat or any type of meat you like. Place the meat into a deep pot, add water enough to cover the meat, and let the party begin! Give the meat a good boil until is nice and tender, and while your soup is bubbling, you should… switch yourself into the active waiting mood! Just kidding!
While the meat is busy, get yourself busy, and finely chop 15 spring onions, and about half a cup of fresh dill. Add the green stuff into the pot, and some salt, and let them cook together with the meat. Mix one cup of good quality Greek yogurt with the juice of a lemon and a pinch of lemon zest for some extra color and flavor. When the meat is nice and tender, if you think the soup level is too low, add hot water enough to cover the meat, give it another boil and then, turn off the heat and add the lemony yogurt into the soup, giving a good stir. Check for salt and, for the final but magic touch, add half a cup of finely chopped lovage and sprinkle some fresh dill, too.
This recipe is so versatile, you can replace the lamb meat with turkey, chicken, beef, pork, you name it! Also, if you can`t find fresh dill and lovage, you can use their dried version. I dare you to try it!
