Fast and yummy coffee cake
This recipe is my way to mix the creamiest cheese with my favorite drink, coffee, without using the oven, which is great especially when I need to make things happen really quick.
First thing first, finely smash 24 Graham crackers and mix them with 6 tablespoons of melted butter. Make sure the mix have the consistency of wet sand. Put the mix into a detachable oven tray and press it to cover the bottom of it. Next, mix two cups of Mascarpone cheese with half a cup of concentrated espresso coffee, eight tablespoons of sugar and one teaspoon of cinnamon, vanilla or even almond extract, it’s up to your taste, but if you will use the almond extract, maybe you should dare for more and replace the Grahams with amaretto crackers. Cover the crust with the cheese cream and put the tray in the fridge for couple of hours. It’s a delight.
It works great in the summertime when you don’t need hot air in your kitchen. It is a great recipe to ask your kids or grandkids for a little help in the kitchen, because they can smash the crackers, mix the cream and even decorate the cake, so they could have a real chance to show off with their… masterpiece! Of course, when kids around, you can replace the coffee with any other flavor they love, could be strawberries, blueberries, you name it, simply using natural syrup.
